making the most of autumn is all about getting cosy, and to me there are few pleasures more comforting than tucking into a slice of gently-spiced cake, still warm from the oven, cup of tea or coffee delicately steaming nearby, with soft familiar songs playing in the background, a couple of candles lit, maybe a postcard in hand to write a faraway friend — and perhaps even a beloved blanket or scarf wrapped around your shoulders, just to keep you extra snug 🧣💌⁣⁣☕️ (the perfect post-mini-adventure activity, be it a hike or a stroll or a trip to the museum or library!)⁣⁣⁣

the two cakes pictured above are (1) a norwegian apple cake with pears, cinnamon and almonds, and (2) a fresh ginger, sweet potato, and pecan loaf, and I love them both — perfect for getting cosy + savouring a slow autumn afternoon with a few treasured people, a deeply engrossing podcast, a nostalgic movie, and/or a very good book 😌🍂📙🕯️✨⁣⁣⁣⁣

roast tomato soup, three-cheese toasties, and a quick little basil garnish on top — not a bad way to use up the last of the fresh tomatoes & basil! I didn’t have anything on hand to blend a soup with, so opted to roast the tomatoes on high heat instead, along with some microplaned onion and garlic, until they collapsed. then I deglazed the bottom of the pan with some red wine, topped everything up with water, and cooked everything down some more on the stovetop (seasoning everything well every step of the way) before finishing the soup with a small splash of cream. in the meantime, instead of making pesto as I would have with more tools in the kitchen, I roughly chopped the basil, scrunched it with my fingers through some coarse sea salt, then covered it sparingly in olive oil. used some of that in the grilled cheeses (made with comté, gruyère, and emmenthal (+ dijon mayo on the outside so they’d get all nice and golden)) and reserved the rest to swirl through the soups just before eating. ate the toasties first, dunked into the soup as with a sauce, then finished whatever was left at the bottom of the bowl with a spoon, just as the sun finished setting. everything about this was so so good, it really was such a treat (and, in the end, I think it all tasted much better than it would have had I had a blender!)⁣

golden pasta for a golden time of year 🌞✨ zucchini and saffron malloreddus — with nothing more than garlic and basil, olive oil & sea salt. superb for using up the last of the fresh summer squash and herbs! the trick here is twofold: first, you want to cook your zucchini for longer than seems sensible, to really coax out its capacity to melt and soften and turn almost creamy, and then, you want to finish cooking your pasta in the pan along with the zucchini for longer than you normally would finish cooking a pasta in its sauce (I didn’t time it, but I’d say roughly twice as long as usual; note that you do end up using more pasta water with this method, so go easy on the salt). the starch in the pasta water is perhaps the secret last ingredient in this simple little dish, as it works wonderfully well to tie everything together in the end — just make sure to stir, stir, stir! the end result is luscious, luxurious, and downright delicious. a perfect meal for harvest season 🍂
