another simple way to savour summer’s last hurrah 💛 delicate raw zucchini ribbons — half tossed through pesto, half tossed through fresh lemon juice and olive oil & served with some really nice fresh mozz, salt, chili, pepper + basil 🍃 turns out you can use those fancy citrus zesters for more than just making fancy curls of citrus zest! put my trusty little tool to good use with this one (though a sharp knife + a bit of patience and attention works just as well)✨

to make the peach toast above, choose a firm yellow peach, slice it into segments, then fry it on medium-low heat in a big pat of unsalted butter, until each piece achieves a deep golden hue, its flesh gently surrendering to the tender poke of a knife’s tip. serve with thick cool yogurt, on toast or alone in a bowl, and let your mood (+ your kitchen’s contents) guide you as to how adventurous or conservative you’d like to be with your choice of sweet and/or savoury toppings. if I’d had honey, thyme or lavender, I may have snuck some into the pan along with the sizzling peaches, however, when in doubt, never underestimate the power of good ol’ olive oil, salt & pepper 😌💛

confited tomato & fire-roasted bell pepper rigatoni! here’s another late summer pasta for you, in addition to the five pasta recipes in today’s newsletter 💌 ⁣⁣

tossed a couple of lightly oiled sweet peppers in the pizza oven and left them there until their skins were a little blackened and their flesh nicely softened. then I simply wrapped them up in foil so they could steam as they cooled, and left them in the fridge until I was ready to use them. ⁣⁣⁣⁣⁣two days later, I slow-roasted some tomatoes with a few cloves of garlic in a rather luscious layer of olive oil (to make so-called tomato “confit”) — blitzed the peppers, tomatoes + now-golden garlic with the flavoured oil, plus some soaked almonds, to make a fiery red pasta sauce. the result was mellow, sweet and smoky. a concentrated taste of summer.⁣⁣⁣⁣⁣⁣⁣

wonderful on its own, yet made even better with a bit of flaky @maldonsalt or parmesan on top (plus an extra drizzle of evoo, if one is in the mood for luxury)⁣ ✨⁣

watermelon feta salad with tomatoes, chili & lime! 💛 such a treat, and a perfect way to mark the end of melon season — the trick here is to generously salt your melon and tomatoes and then… just let them sit. pop them into a bowl, wait around 20 minutes or so (until they’ve made their own juices but still hold their shape), then add some fresh lime juice to the watermelon-tomato elixir and combine everything with crumbled feta, fresh lime zest, fresh mint + basil leaves, chili flakes, plus a healthy drizzle of good evoo. using their own juices to dress them makes the melon and tomatoes taste more of themselves, this dish more of summer, and (if I may be so bold to say) life more of itself 🍉✨😌
