Had we grown up eating freshly pan-seared Brussels sprouts with a sad side of over-boiled steak, might we be more inclined to favour the sprouts over the beef?

watermelon feta salad with tomatoes, chili & lime watermelon feta salad with tomatoes, chili & lime 😌 I’m not sure these images quite convey just how mind-blowingly delicious this one was. such a treat, and a perfect way to mark a rather short watermelon season. the trick here is to generously salt your melon and tomatoes and then just let them sit in a bowl to make their own juices (I left mine for 20ish minutes) — then add some fresh lime juice to the watermelon tomato elixir, and combine everything with crumbled feta, fresh lime zest, fresh mint + basil leaves, chili flakes, and a healthy drizzle of a very good extra virgin olive oil. using their own juices to dress them makes the melon and tomatoes taste more of themselves and this dish more of summer and, to be honest, life more of itself 🥹 possibly my new favourite way to eat watermelon, ever 🍉✨

(p.s. for extra thick tzatziki, strain your yogurt or use labneh instead + make sure to squeeze as much liquid out of the grated cukes as you can before swirling them through) ✨🫶
